Right after you make it – enjoy as a soft serve – OR – freeze for a couple hours and then scoop up as more traditional ice cream texture. Either way, you’re loving life. There’s been a lot of excitement in our house since we discovered this: A filling and satisfying treat that tastes AMAZING? A treat that also happens to give you a serving of fruit and 25 grams of protein? All this for right around 300 calories? I give you – protein ice cream. Here’s what you’ll need: frozen bananas (peeled and sliced) OR frozen strawberries & raspberries vanilla whey protein powder almond milk optional: vanilla or almond extract, honey or other sweetener to taste a food processor This recipe is not an exact science, so you’ll want to play around with the quantities to get the ‘ice cream’ the exact consistency that you like. Warning: loved ones in the house will come running with spoons, so be prepared to share. You may need to add a little more almond milk, or a little less. Most importantly, the fruit needs to be completely frozen, or the recipe just won’t work! For the banana (vanilla) ice cream: about one and a half bananas – frozen, peeled and sliced (word to the wise – peel them BEFORE you freeze them!) one scoop vanilla whey protein powder about 1/4 cup almond milk *** If you like, about a teaspoon of vanilla or almond extract – less or more based on your preferences. Simply place everything in a food processor, and begin blending. You’ll have to stop a couple times and scrape the sides, and make sure the liquid is evenly distributed. You’ll probably blend about 30 seconds or less, then stop and scrape the sides, then another 30 seconds or less again. When you start to see a consistency that resembles soft serve ice cream, or a Wendy’s frosty – BAM! You’re good. grab a spoon. This whips up to become about three cups of ice cream. For the strawberry ice cream: about a cup and a half frozen berries a scoop of vanilla whey protein powder 1/4 cup almond milk some honey or other sweetener to taste Place frozen berries into food processor, add protein powder, almond milk and sweetener if desired. Blend for about 20 seconds, then scrape the sides and add more milk if desired. Blend again until the mixture reaches ice cream consistency. Enjoy!
